Lentil Soup

Lentil Soup

2 cans vegetable broth* 
3 cups lentils, rinsed* 
1 can crushed tomatoes*
2 handfuls chopped kale
3 sweet potatoes, chopped
½ onion, chopped
3 garlic cloves, minced
2 tsp black pepper
2 tbsp olive oil
 

Directions:

  1. Saute garlic and onion until translucent in a big pot under medium heat.
  2. Add sweet potatoes and tomatoes into the pot. Stir occasionally for about 4 minutes.
  3. Add the veggie broth. Then, fill the can with water and add to broth.
  4. Bring to a boil. 
  5. Add the chopped kale with lentils. 
  6. Lower heat to low. Let simmer for 15 minutes.
